We started to paint the box, we are painting it black and red we are painting flames on it

Main dish: Chicken, Fennel and Apple Guo-tie

Ingredients:

2 cups all-purpose flour, plus more for dusting

3⁄4 cup warm water

For the filling

1 fennel bulb, trimmed and finely diced

1 Tbsp. plus 1⁄4 tsp. kosher salt

1 pound boneless, skinless chicken thighs

1 apple, peeled, cored, and grated

4 garlic cloves, finely grated

1⁄2 tsp. grated fresh ginger

2 tsp. light brown sugar

1 tsp. toasted sesame oil

1⁄2 tsp. soy sauce

Neutral oil for pan frying

Side dish: Scallion Pancakes

Dough
• 2 cups all-purpose flour
• Kosher salt
• ½ cup plus 2 tablespoons boiling water
• 3 tablespoons room-temperature water
• 1 teaspoon canola or grapeseed oil, plus more for oiling the pan

Flour and Scallion Oil Spread
• 4 scallions, green and white parts, chopped
• 1 teaspoon kosher salt
• 1½ tablespoons all-purpose flour
• ½ cup canola or grapeseed oil (or any neutral oil)

Deserts: Strawberry Mochi

INGREDIENTS

  • 1 1/2 cups glutinous rice flour
  • 1/4 cup sugar
  • 1 cup water
  • 1/3 cup cornstarch
  • 12 strawberries
  • 2 teaspoons beet and hibiscus powder, dissolved in 2 teaspoons water

FOR THE BEAN PASTE

INGREDIENTS

  • 2 (15 ounce) cans white kidney beans
  • 1/4 cup sugar
  • 3 tablespoons rice malt syrup

  • 1/2 gallon water
  • 13 Orange pekoe/black tea blend tea bags
  • 1/2 gallon iced water
  • Sugar to taste
